Bocconcino means “little mouthful”and is a version of traditional Tomino cheese. This version uses 100% goat’s milk. It is a creamy table cheese with a mildly goaty flavor. The thin bloomy rind encases a delicate creamy paste. Though delicious eaten as is, when warmed, the flavors of the Bocconcino open up, becoming more fragrant and robust. A traditional preparation is to wrap the small cheese in prosciutto and warm them in a pan for a creamy, salty beginning to your meal.
